Creamy Cucumber Chickpea Soup: Great for Weight Watchers

Spring has come, summer is just around the corner. What could be better this time of year than enjoying a delicious cold soup made with fresh cucumbers, yogurt and spices.

This soup is made with boiled chickpeas, which gives the dish a creamy texture and is great for weight watchers.
Ingredients
- 3 cucumbers
- 1 cup chickpeas
- Coriander leaves
- Black pepper optional
- 3 cloves garlic
- 1 cup low-fat yogurt
- 2 chili peppers
- Garlic salt as needed
- 1 tablespoon olive oil
- Water as needed
Preparation
- Wash and soak the chickpeas overnight, drain and cook until tender. Wash, peel the cucumbers and cut them into small pieces.
- Take a blender and add cucumber, green chillies, chickpeas, yogurt, black pepper, salt and coriander leaves. Whisk until the mixture turns into a thick, creamy soup.
- Take a frying pan, add olive oil along with garlic, fry well and pour into the soup, mix well. Decorate however you like and enjoy!
