Creamy Cucumber Chickpea Soup: Great for Weight Watchers

Spring has come, summer is just around the corner. What could be better this time of year than enjoying a delicious cold soup made with fresh cucumbers, yogurt and spices.

This soup is made with boiled chickpeas, which gives the dish a creamy texture and is great for weight watchers.

Ingredients

  • 3 cucumbers
  • 1 cup chickpeas
  • Coriander leaves
  • Black pepper optional
  • 3 cloves garlic
  • 1 cup low-fat yogurt
  • 2 chili peppers
  • Garlic salt as needed
  • 1 tablespoon olive oil
  • Water as needed

Preparation

  1. Wash and soak the chickpeas overnight, drain and cook until tender. Wash, peel the cucumbers and cut them into small pieces.
  2. Take a blender and add cucumber, green chillies, chickpeas, yogurt, black pepper, salt and coriander leaves. Whisk until the mixture turns into a thick, creamy soup.
  3. Take a frying pan, add olive oil along with garlic, fry well and pour into the soup, mix well. Decorate however you like and enjoy!
