Ingredients

  • 1 cup blanched unsalted cashews
  • 1 cup almond milk
  • 3 tablespoons tapioca
  • 1.5 tablespoons nutritional yeast
  • 1/2 tablespoon apple cider vinegar
  • 1 teaspoon pink Himalayan salt
  • Ice cubes

Preparation

  1. Fill a large bowl with water. Add ice cubes and set aside.
  2. Add all remaining ingredients to blender. Beat at full speed until smooth.
  3. Pour the mixture into the pan. Cook over medium heat for 2 minutes until thickened.
  4. Remove the pan from the heat. Use a spoon to scoop out balls from the mixture and place them in the ice water.
  5. Let the balls sit in the ice water for 5 minutes or until they harden. When finished, they should become elastic. Remove the balls from the water using a slotted spoon and use them as needed.
