Mozzarella is the gold standard of Italian cheese. It is best known for its creamy texture and slightly sour taste, a combination that many Italians adore.

Ingredients
- 1 cup blanched unsalted cashews
- 1 cup almond milk
- 3 tablespoons tapioca
- 1.5 tablespoons nutritional yeast
- 1/2 tablespoon apple cider vinegar
- 1 teaspoon pink Himalayan salt
- Ice cubes
Preparation
- Fill a large bowl with water. Add ice cubes and set aside.
- Add all remaining ingredients to blender. Beat at full speed until smooth.
- Pour the mixture into the pan. Cook over medium heat for 2 minutes until thickened.
- Remove the pan from the heat. Use a spoon to scoop out balls from the mixture and place them in the ice water.
- Let the balls sit in the ice water for 5 minutes or until they harden. When finished, they should become elastic. Remove the balls from the water using a slotted spoon and use them as needed.
