Ingredients (for 3 servings):
– 400 g broccoli,
– 2-3 tomatoes,
– 2-3 potatoes,
– 1 carrot,
– 1 large onion,
– 1 tablespoon butter,
– 2-3 sprigs of parsley (optional),
– 1 teaspoon salt (to taste),
– 1.2 liters of water.
Preparation:
- Peel the carrots and potatoes. Cut the potatoes into large cubes and the carrots into small cubes.
- Peel and cut the onion into quarters and rings.
- Separate the broccoli into florets.
- Pour boiling water over one tomato for one minute, then cool it in cold water and peel it. Cut this tomato into quarters and slices. Grate the second tomato using a coarse grater and discard the remaining skin in your hand.
- Heat a frying pan over medium heat and melt the butter. Fry the onion in a frying pan until translucent, about 3-4 minutes.
- Boil 1.2 liters of water in a saucepan, then add onions, potatoes and carrots to the boiling water. Cook the vegetables for about 10 minutes.
- Add broccoli to the pan and cook for another 5-7 minutes.
- Finally, add the tomatoes to the pan and cook for another 5 minutes. Salt the soup to taste.
- Finely chop the parsley and add to the broccoli soup. Let the soup simmer, covered, for about 10 minutes.
- Ladle the broccoli soup into bowls and serve. If desired, you can add sour cream.
